Disodium ethylenediamine tetraacetic acid is a white crystalline particle or powder, odorless and tasteless. It is soluble in water, but extremely difficult in ethanol. It is an important integrator and can bind metal ions in solution. Prevent metal caused by discoloration, deterioration, turbidity and vitamin C oxidation loss, but also can improve the antioxidant oil (oil trace metals such as iron, copper and so on have the role of promoting oil oxidation).

Can maintain the color, smell, taste of canned food, for crabs, shrimp and other canned aquatic products, the addition of ethylenediamine tetraacetic acid disodium can prevent glassy crystallization of Struvite precipitation, to ensure the quality of processed products. It is also used as stabilizer and coagulant for pickles and canned food. The maximum usage is 0.25g/kg.
